Whole Roasted Chicken
 

Ingredients:

1 five-pound chicken

½ yellow onion

2 tablespoons packed fresh basil leaves

5 garlic cloves

1 lemon (1 tablespoon juice and rind)

1 tablespoons extra-virgin olive oil

2 teaspoons SPG mix

 

Preparation:

  1. Pre-heat oven to 350 degrees

  2. Remove innards from chicken

  3. Rinse chicken under cold water, pat dry with a paper towel and set aside

  4. Cut onion in half and set aside

  5. Tear basil leaves in half and set aside

  6. Smash garlic cloves open, discard skins and add set cloves aside

  7. Cut lemon in half          

  8. In a small bowl combine lemon juice with olive oil and evenly rub over chicken

  9. Season inside and outside of chicken with SPG mix

  10.   Fill chicken’s cavity with onion, basil, garlic and lemon rind

  11.   Put chicken in a roasting pan

Cooking:

  1. Roast chicken in oven 75 minutes, until a meat thermometer reads 160 degrees

  2. Remove chicken from oven and let rest 5 minutes

  3. Carve chicken

  4. Serve and enjoy
