Steak Fajitas
 

Ingredients:

2 yellow onions

1 red pepper

1 green pepper

2 jalapeño peppers

2 garlic cloves

zest of 1 lime

1 tablespoon packed light brown sugar

2½ tablespoons Mexican spice mix (divided 1 tablespoon and 1½ tablespoons)

3 tablespoons extra-virgin olive oil (divided 1½ tablespoons and 1½ tablespoons)

1¼ pounds flank steak

½ teaspoon freshly ground black pepper

1 teaspoon fresh lime juice

Preparation:

  1. Thinly slice onions and set aside

  2. Thinly slice red and green peppers and put in a bowl

  3. Fine dice jalapeños and add to bowl

  4. Puree garlic and set aside

  5. Zest lime and put zest in a small bowl

  6. Add brown sugar, 1 tablespoon Mexican spice mix and 1½ tablespoons olive oil to lime zest and mix to form a paste

  7. Evenly rub paste over one side of steak and set steak aside

  8. Grind black pepper and set aside

  9. Pre-heat grill over a medium-high flame 15 minutes

Cooking:

  1. Pre-heat a large sauté pan over a medium-high flame 1 minute

  2. Add remaining 1½ tablespoons olive oil

  3. Add onions and sauté 4 minutes

  4. Add peppers and sauté 4 minutes

  5. Add garlic and remaining 1½ tablespoons Mexican spice mix and sauté 2 minutes

  6. Add lime juice and hold vegetables over a low flame while steak cooks

  7. Put steak on grill paste side down

  8. Season other side of steak with black pepper and grill 5 minutes

  9. Flip steak over and grill 5 minutes

  10.   Remove steak from grill and let rest 5 minutes

  11.   Thinly slice steak against grain and add to vegetables

  12.   Serve and enjoy
